Cream filled cracker cookies



This cookie is inspired by the fact I wanted a crunchy textured cookie made from a base of graham cracker. And it had to be filled with something magic. 

I will say, not everyone is likely to be craving a cocoa graham cookie filled with cream cheese filling so, make at your own risk. they are not super sweet.

Ingredients for cookie:
1/2 cup white flour
1/2 cup w.w. Flour
1/4 cup brown sugar
1/4 cup white sugar
1/3 cup butter
1 tbsp cocoa powder
1/4 tsp salt
1/2 tsp baking soda
3 Tbsp water

Take the dry ingredients and mix together, then use your hands or a spoon to mix the butter in, once the butter has been in and the mixture looks like larger dark flakes of flour add 1 tbsp of water at a time and then push the mixture into one mass with your hands. Cut the dough into 12 equal sized portions or scoop with a cookie scoop.  Roll into balls and flatten into similarly sized pieces. Bake at 300F for 20 mins.

Once cooled match the cookies to the most similar size and fill with your icing. 

Filling:
4 oz cream cheese
1 cup icing sugar 

Cream the cream cheese until softened in your bowl with a fork then add the icing sugar and mix with your fork until blended and smooth. You can add vanilla or other things. But I didn't,
